I noticed my breakfasts weren’t quite cutting it for the harsh weather and long runs early in the morning. Also, trying to make first chair doesn’t exactly bode well for having enough time for a huge breakfast. My solution is these super muffins. They are packed full of nutrients and protein and a touch of sweetness to give a little pick-me-up especially with that coveted cup of coffee. So make a batch and grab a couple when you are running out the door up to the mountain.

Meatballs From Start to Finish

Ever work up an appetite skiing? Uh…yeah of course! Well this is a take on a classic that will fill you up and pair with a ton of different options. I have some allergies so I tend to modify my recipes to make sure they don’t have any corn or tomato and limit the dairy.

I paired this with a great whole wheat pasta and some pesto (going to be honest here, the pesto is from Costco but it is soooo good). My resident sommelier also paired a great German wine called Meinklang with it and it couldn’t be better. I also couldn’t have a happier man here. So give it a go next time you want a hearty meal and let me know your thoughts.

As you may have learned, we have a very loving pit-bull/lab/boxer mix that is pretty much amazing.  When on a walk, we were able to miraculously capture the beauty of a pit-bull attack of love.  The loving Stella stalked her prey with eyes of passion.  When her victim slipped and fell in the depths of the new powdery snow, she swept in and the tongue came out and the launch into action commenced. If you have ever questioned the personality or amazingness of a pit-bull, think again.

Dreams are coming true, and we couldn’t be more excited!

Matt, Stella and I just moved up to the Vail, Colorado. We wanted to fully embrace the ski culture and snow in a way that we all have wanted to explore (especially Stella). I know it was a rough decision as you can imagine…ha ha.  It has been great settling into our new lives up here.  Although, I have to remember how to get out there and meet people. Stella and I are keeping busy working on designing, creating yellow snow, and making puzzles.
